Situated on the Scornello hill between Volterra and Pomarance, the Fattorie Inghirami covers an area of about 340 hectars.
A part of the farm is destined to the production of cereals. Another part is maintained by a olive orchard for the production of extra virgin olive oil. It makes a sort of a circle within the farm of a thick mediterrenean woods.
The farm stays true to it promise of organic farming to save the environment with rotations that protect the fertility of the terrain. In the fields, woods, and the return of wild birds who make their nests in the Frangivento hedges.
There are other modern additions set up next to the ancient olive groves for pressing olives and producing organic extra virgin olive oil. Thanks to the attention given to handpicking and grinding of the olives, one can be assured of the quality taste.
Spelled was the staple food of the Etruscans and Romans. Its success was due to the fact that it grows well in poor soils and is very resistant to cold. Its abandonment was due to the low yields and the difficulty of harvesting as the grains tend to fall off at the moment of ripening.
We reintroduced it because it is well suited to the poor soils of the Volterra area, the cold and windy climate of our winters, and above all for its nutritional characteristics
